Don’t call me Cortina, I’m not an 80s car, I’m more like a Valpolicella. Produced using Corvina grapes, one of the varieties used to make Valpolicella, but while Valpolicella comes from the north of Verona, this is made to the the west. A portion of the grapes are dried for 30 days before fermentation to make the wine richer, more concentrated and add dried fruit and chocolate notes to Corvina’s natural cherry and pepper flavours. With no oak ageing, this is smooth and dangerously easy to drink. Combined with pizza or a tomato-based pasta this is a timeless classic, unlike the Ford Cortina, which is starting to look a little dated.
Between Custoza and Bardolino, lies the territory of Sommacampagna. This historical area with its sweet and gently rolling Morenic hills form the backdrop to the Ronca winery, whose vineyards are gently caressed by the mild breezes coming from the nearby Garda Lake and characterised by the strong minerality of the Morenic hills. The Ronca family cultivate their estate grown grapes for the production of DOC wines typical for the Garda territory, such as, Custoza, Bardolino, Chiaretto, as well as the IGT wines Garganega, Corvina and Spumante Champenoise method. Traditional maceration on the skins after a short drying of some of the grapes in boxes for approx 30 days. In order to enhance the fruity aromas the fermentation temperature does not exceed 22 – 25 °C. The alcoholic fermentation is immediately followed by malolactic fermentation in order to obtain greater softness and drinkability.
